Broccoli is a descendant of wild cabbage and is one of the most delicious and nutritious vegetables on the menu. It is rich in Vitamin C, protein, fibre and flavour and has many culinary uses. It has a long growing season.
Wash broccoli, cut into small sprigs and boil or steam until just tender. Drain and set aside.
Or for a soup: Cook 2 washed heads and stems (as shown in photo) in 1 litre of vegetable stock, add 1 onion, 1 carrot and 1 potato. Add salt and pepper, if required. Bring to boil, then simmer for 20 minutes. Take off heat. Let cool, then blend. When serving add a desertspoon of organic sour cream to the serve.
Eat this little health wonder regularly, it’s getting quite a name for itself. |
