Celery |

Storing celery - Keep celery in a plastic vegetable bag each end of the bunch and tied. Keep it in the back of the fridge on the shelf just above the crisper drawer. Tied up like this, completely sealed, it can last about two weeks. Never break apart the bunch unless you are about to use it, as it will stay fresher if kept whole.
Using celery - Raw: Use the celery stalks (and leaves) sliced, diced or grated in salads and sandwiches. Drink the fresh juice mixed with apple and carrot for a great daily tonic. One way of eating celery is by cutting into sticks and dipping into a dip or fill with a ricotta/basil mix. Cooked: Use it in soup, stews, casseroles, patties and stir fries. Be sure to include the leaves as they have a lot of flavour.
Raw celery contains vitamins A, B-complex, C, and E, and contains the minerals calcium, magnesium, phosphorus, potassium and sodium. Once cooked, it loses its vitamin E and only minimal amounts of B-complex vitamins remain. |
